The material of the bits is Sweet iron. By contact with (air) humidity, Sweer Iron develops surface rust that tastes sweet and naturally stimulates saliva production, which ensures better acceptance of the bit. This rust process (oxidation) changes the color of the bits to brown-gray.

When a sweet-iron bit is temporarily not used, an orange-brown rust layer can form on the mouthpiece. This can be easily removed by wiping the bit with a damp cloth.
